Every service begins with the hearth. Vine wood is lit at four, the room is quiet, and by six the coals are ready to cook on.

Twenty-eight seats, a long oak counter that faces the fire, and lamps low enough that the light comes mostly from the embers.

Everything is sourced within an hour of Lyon. Names appear on the menu when the produce is exceptional, quietly when it is not.

The menu is rewritten each morning around what arrives at the back door. Nothing is held over, nothing is served twice the same way.

A short, honest wine list from small growers across the Rhône, Beaujolais and Savoie — most poured by the glass or half-bottle.

Service is unhurried. Courses arrive when they are ready, plates are cleared without ceremony, and the evening ends when you decide.
